The Easiest Vegan Pad Thai Ever
This is truly the easiest vegan pad thai ever made. Filled with seared tofu, mushrooms, garlic, and onion, this bowl of flavor is coated in a super yummy peanut lime sauce (made with no soy sauce at all)! You've got to give it a try

Ingredients
Pad Thai
- 4 oz brown rice noodles
- 8 oz extra-firm tofu, cubed
- 3 cremini mushrooms, sliced
- 2 cloves garlic, minced
- 4 scallions, chopped
Peanut Lime Sauce
- ¼ cup peanut butter (I used Crazy Richards)
- 3 tbsp water
- Juice from 1-2 limes
- 2 tsp apple cider vinegar
Instructions
- Cook noodles according to directions on the package. While noodles are cooking, place all the ingredients for the sauce in a small bowl. Stir well, set aside.
- In a large skillet over medium heat, sauté tofu, mushrooms, garlic, and scallions for 5 minutes. Add in the cooked brown rice noodles, then stir in the peanut lime sauce. Cook for another 2 minutes.
- Top with more scallions and chopped peanuts, and enjoy!
